Our Name

The name Echo & Rig is rooted in contrast and balance — a nod to both elegance and strength. ogether, they reflect our philosophy: thoughtful, purposeful food with substance behind it.

Echo:
From Greek mythology, represents voice, presence, and story.

Rig:
Symbolizes utility, power, and craft.

Our Cuts

We partner with ranchers and farms who share our standards — like Cape Grim in Tasmania and Creekstone Farms in Kansas — to bring you the top 2.5% of USDA-graded beef.

From classic cuts to lesser-known favorites, we offer a wide selection of steaks, finishes, and entrees — all butchered in-house and prepared to let the quality shine.

About Chef Sam Marvin


Chef Sam Marvin is the Owner and Executive Chef of Echo & Rig Steakhouse in Las Vegas, Henderson and Sacramento.

A California native with serious classical French training, Chef Sam earned his cooking stripes working in top-rated Michelin star restaurants. He previously owned and operated Bottega Louie in Downtown Los Angeles, before branching out with his own brands in Las Vegas and Sacramento.

His Las Vegas Echo & Rig restaurant was named LV Weekly’s “2021 Best Las Vegas Steakhouse.” Chef Sam competed in Food Network’s cooking competition, Beat Bobby Flay, and earned a prestigious win.

About Our Butcher Shop


In addition to our steakhouse, Echo & Rig proudly houses a butcher shop, full of high-quality cuts available directly to our guests to take home and enjoy.

Chef Sam Marvin has travelled the world to visit ranches and farms, meeting with the teams who are raising the best cattle. Our flagship butcher shop serves a range of cuts, including limited edition beef from Cape Grim and Robbins Island, Tasmania, home to the “cleanest air in the world”
